What Are Worms in Sockeye Salmon

Sockeye salmon can harbor parasitic nematodes, often called herring worms or anisakid nematodes. These thin, white worms are naturally present in wild marine fish and are not a sign of spoilage.

Risks and Safety

Consuming live worms may cause discomfort but rarely serious illness. Freezing salmon at -4°F (-20°C) for at least 7 days kills parasites, and thorough cooking to 145°F (63°C) eliminates them. The U.S. Food and Drug Administration provides guidance on parasite destruction in seafood at https://www.fda.gov/food/seafood/commercial-seafood/parasites.

Handling and Inspection

Check fillets for worms before cooking. Remove any visible worms with a clean knife or rinse them off under cold water. Purchase from reputable suppliers and follow proper refrigeration and cooking practices to reduce risk.
